Horse mackerel. The flesh is large and has a firm, fresh texture.

Flounder. It's seasoned with salt, giving it a refreshing sweetness. The delicate white flesh really stands out.

Sweet shrimp. You can taste their rich sweetness.

Spanish mackerel. It's been seasoned with salt and carefully grilled, giving it a wonderful aroma.

The flesh is sweet and tender.

Flathead fish. Topped with ponzu jelly. The acidity pairs well with the firm, light white flesh.
